Mix 3 eggs into a ½ cup of cold water. This is so the eggs will not cook in the water. Whisk the salt, baking powder and flour together in a large bowl. Make a well and add liquid ingredients. Mix and knead dough until elastic. Add additional flour if needed. Divide dough into 3 parts. Cover unused dough with plastic wrap. Roll out one section at a time to approximately the thickness of a pencil. Cut into 1-inch strips. Sprinkle with a little flour to avoid sticking in the cavatelli machine. Place them on a cloth to dry out slightly to avoid sticking. This will help if you’re freezing them for future use. Recipe makes 3 pounds.
